Drinks International can exclusively reveal that Parisian neighbourhood bar and cocktail pub, The Cambridge Public House, will host ‘The Cambridge Global Series’, in celebration of the Rugby World Cup this October.

The bar will host nine international bars, each from one of the qualifying countries, for a series of takeovers and seminars from 1-3 October.

The Cambridge will host three guest shifts on each night of The Cambridge Global Series, beginning with Sin + Tax from South Africa, Freni e Frizioni from Italy and Panda and Sons from Scotland on Sunday 1 October.

The Cambridge Public House, an English-inspired, award-winning Parisian bar, has set sail for Hong Kong and Australia in a bid to build a more sustainable future and support local communities worldwide.

Having already stopped in Hong Kong, taking over Penicillin on April 30, The Cambridge has set up in Sydney this week, hosting events at -Re and PS40 before heading to the Caretaker’s Cottage in Melbourne on May 8.

The world tour is part of the bar’s climate action plan, the first point on its larger 2023 Global Community Plan, designed to aid the implementation of six United Nations sustainable development goals.

During their visit, the team from The Cambridge will be reviewing the responsible consumption of and production processes used by the bars in Australia and hosting a series of masterclasses in collaboration with the partner bars...

Copenhagen bar, Ruby, will be hosting a brunch with Paris bars The Cambridge, Candelaria and Little Red Door.

The event, sponsored by blended malt scotch whisky Naked Malt, will see the bars collaborating to present an exclusive cocktail menu alongside pastries from Danish bakery, Hart Bakery.

The takeover will take place across Ruby’s venue; Little Red Door and The Cambridge will take over the first floor bar with Candelaria hosting in the basement bar.

The afternoon will provide guests with an amalgamation of Ruby’s ingredient-focused menu with Parisian hospitality. The bars will join together themes that are integral to them such as sustainability and local, seasonal ingredients.

Paris-based bar The Cambridge Public House has launched a global community plan, outlining six sustainable development goals (SDGs) to encourage better practices for the drinks sector.

Each team member will choose one of the six SDGs from the plan to focus on, to work towards developing ‘better practices and education’ for the drinks industry.

SDGs have been outlined in the United Nations (UN) agenda for 2023 – there are 17 in total.

The plan will kick off in May, with the team travelling to Hong Kong and Sydney to carry out the first SDG: climate action...

No you’re not in London, but yes this is most definitely a British-inspired watering hole. Denoted as such by the three co-founders, who met and worked in the Big Smoke, this pub in the Marais is always popping. You may have to speak an octave higher than normal over the Tears for Fears blasting from the speakers to hear whomever you’re chatting with. While you can book one of the tables or plush velvet banquettes, there’s a room-for-everyone vibe at the living room-esque space (complete with a Chesterfield couch) where the distinguished color scheme includes forest greens and woodsy browns and the deco includes 18th century oil paintings of hounds. The cocktails change regularly, and there’s always a weekly special such as the recent Trance Dance featuring apple, cinnamon, gingerbread, and rum. Menus are in English, and each drink is listed with three easy adjectives to help describe them such as “velvety, earthy, fresh” for the signature Cigarette After Sex, which has been on the menu since the bar opened in 2019.

C’est en plein cœur du Marais, dans le 3ème arrondissement de Paris, que nous avons rencontré Maros Dzurus et Davide Osso, bartenders au bar Himkok, à Oslo (Norvège). Invités par The Cambridge Public House, un bar à cocktails conçu dans l’esprit d’un pub anglais, ouvert en 2019, ils ont apporté un aperçu de leur savoir-faire à travers une masterclass et une carte de cocktails. “Himkok tente d’incarner la culture norvégienne à travers les cocktails créés et les spiritueux distillés, en restant fidèle à la nature environnante et à l’accessibilité”, indiquent-ils. Originaire du sud des États-Unis, c'est l'ancêtre du mojito. Ses premières traces remontent à 1803 dans le livre de John Davis Travels of Four Years and a Half in the United States of America où on le décrit comme une liqueur contenant de la menthe que les Virginiens buvaient dès le matin.
Tra­ditionnellement, on le sirote dans un gobelet en argent. Chez James Bond, c'est le grand ennemi Auric Goldfinger (joué par Gert Fröbe) qui lui sert un verre dans son haras du Kentucky...

Depuis le 19 mai, The Cambridge Public House reçoit de nouveau ses clients, en terrasse puis en salle. Un soulagement pour l’équipe de ce bar parisien, situé rue de Poitou (3ème arrondissement), qui étrenne à cette occasion une nouvelle carte de cocktails et s’attèle à développer son identité proche des pubs anglais, avec une large place accordée à la bière et, caractéristique de l’établissement, sa cuisine située dans le prolongement du comptoir. « Nous sommes des barmans qui font de la cuisine. Nous recourons, pour nos cocktails, au sous-vide, au bain-marie… La question des accords est également très importante », souligne Greg Inder, cofondateur en janvier 2019 avec Hyacinthe Lescoët et Hugo Gallou...

Bio, responsable et écolo… Quand les bars à cocktails montrent l’exemple

Toujours en phase avec l’air du temps, les bars à cocktails ont intégré des préoccupations sociétales et écologiques à leurs offres mixologiques. Petit état des lieux à l’occasion de la sixième Paris Cocktail Week, qui cette année annonce la couleur : “Plus de vert dans les verres” !

On ne le sait pas toujours, mais, derrière un comptoir de bar à cocktails, on trouve très souvent des gens responsables, aussi vertueux que virtuoses ! Ce ne fut pas toujours le cas, et ce sont des années de mauvaises habitudes et d’ignorance qu’il faut désormais oublier, pour inventer de nouveaux réflexes. « On ne peut pas se déclarer bar responsable du jour au lendemain : c’est un processus de longue haleine, qui demande de la réflexion et beaucoup de recherche... » explique Hyacinthe, patron du Cambridge Public House, passé par Les Grands Verres, le bar-restaurant du Palais de Tokyo, pionnier du zéro déchet dans le secteur.

Pour un bon cocktail, tout commence par un bon produit. Ces dernières années, beaucoup de progrès ont été faits dans le domaine du bio, mais aussi des circuits courts, avec l’achat en direct aux producteurs locaux, pour réduire l’empreinte carbone des livraisons et travailler avec des fruits et légumes de saison...

Bande-son Albion pop, tableau de sous-bois à la Gainsborough, murs vert bouteille, laiton et acajou partout… Le bar du Breton Hyacinthe Lescoët (ex-Mary Celeste) et du Briton Greg Inder (ex-Glass) coche toutes les cases du pub anglais tradi. A leur carte saisonnière, douze brexcitants cocktails sortent des sentiers battus (13 €), comme ce tellurique Big In Japan, façon Dirty Martini aux senteurs forestières (gin infusé aux shitakés + vermouth + sherry fino + aquavit), ce très country Behind The Sun à base de pineau, scotch, cidre, jus de coing et citron, ou encore cet ultra-groovy Funk Attack, mixant lait ribot et gin infusé au kombu. Sinon, pour plus de douceur, tout miser sur l’Agua de Jamaica avec hibiscus, miel et verjus (8 €). Sans oublier, pour la grignote, quelques spécialités over roast beef : meat pie, sausage roll… de 8 à 16 €.

A chacun son dimanche soir. Au moment où nous écrivons ces lignes, après avoir enquillé un nombre incalculable de breuvages (journaliste, définitivement un métier à risque), des applaudissements nourris retentissent au sein du Palais de Tokyo. Pour cause : en ce 26 mai 2019, nous venons avec d’autres confrères de remettre un prix aux heureux gagnants de cette 12ème édition parisienne des Cocktails Spirits, salon réservé aux professionnels du bar et des spiritueux. La nouveauté cette année, c'est ce très attendu classement des meilleurs bars et mixologues de France, qui récompense les rois (et surtout reines) du shaker.

Un classement qui a du chien :

Dévoilé à 18h45, le palmarès de ce premier « Golden Dogs 2019 » cornaqué par la fine équipe de la Paris Cocktail Week distingue 100 lieux, femmes et hommes qui font bouger la profession. Les fondateurs, Éric Fossard et Thierry Daniel, voulaient une cérémonie festive et chaleureuse, histoire de mettre un gros coup de projo sur la communauté du bar, pas si connue que ça. Du moins à Paris...

At the time of writing, Cambridge Public House has been open for one week exactly. But when you walk in the door it feels as homely and well-loved as your grandmother’s front room.
